Ingredients

    Rice Noodles, 115 grams soaked in hot water until soft, drain.
    prawns, cooked, 16
    Peppers, sweet, red, raw, sliced, 0.5 cup
    Cucumber (with peel), 0.5 cucumber cut into strips
    Red Ripe Tomatoes, 1 medium sliced
    2 Shallots, finely chopped
    Coriander, fresh, 1 handful, chopped

    Dressing;
    Rice Vinegar, 1 tbsp
    Fish Sauce, 2 tbsp
    Lime Juice, from 1 lime
    pinch salt
    Ginger Root, 0.5 tsp grated
    Lemon grass (citronella), fresh, 1 tbsp finely chopped
    1 red chilli Pepper, deseeded and finely chopped
    2 tbsp chopped fresh mint
    tarragon finely chopped, 2 tbsp
    1 tbsp snipped chives

Directions

Make dressing by combining all ingredients and whisking well.

Drain noodles, plunge them into pan of boiling water for 1 min, drain, rinse under cold running water and drain well again.

In large bowl combine the noodles, prawns, red pepper, tomato, cucumber and shallots. Season to taste. Toss in the dressing and garnish with coriander.
