Introduction

One of my family's favorites. Not spicy. My 3yr old eats this up! To make it heartier add ham and green peppers. To make it spicy, add tobaso. I have made alterations to this recipe for what I have in my cubard, and it has been delicious every time with black eyed peas, pinto beans, and even keilbasa. Enjoy it your way! Ingredients

    1 Tbsp Extra Virgin Olive Oil
    1 sm Onion diced
    2 cloves Garlic
    1 can of Red Kidney Beans
    2 tsp Ground Cumin
    1 6oz Tomato Paste
    1/2 c Water
    3 links of Chorizo diced or sliced
    2 cups of Kraft Minute Brown Rice

Directions

Serves 4

Prepare Rice 2 cups water vs rice
Heat skillet on stovetop
Add EVOO, Garlic & Onion - sautée
Add Chorizo - brown
Add Beans, Tomato Paste, 1/2 c. Water, Ground Cumin - stir and heat until desired temp.

Spoon on top of rice, enjoy!

    Very Good
    My family thought this was very good. Easy to prepare and fairly quick. I used regular brown rice and cooked that while preparing the rest of the dish. Would definately make this again! - 5/10/10
