Introduction

Ingredients

    1-1/2 cups whole wheat flour
    1 cup oat bran
    1/2 cup ground flaxseed
    2/3 cup brown sugar
    4 tsp. baking powder
    1 tsp. baking soda
    1/2 tsp. salt
    1/4 tsp. nutmeg
    3 eggs, lightly beaten
    1-1/2 cups mashed bananas
    1-1/2 cups buttermilk
    3/8 cup (1/4 +1/8) orange juice concentrate
    2 T. oil
    1 tsp. banana flavoring
    1 tsp. orange flavoring
    2 cups fresh or frozen raspberries

Directions

Preheat oven to 375. Spray 24 muffin tins with non-stick spray. In a large bowl, combine dry ingredients. In another bowl, whisk together wet ingredients. Stir the wet into the dry just until combined. Stir in raspberries. Divide batter among the prepared muffin tins. Bake for 20-25 minutes or until done. Makes 24 muffins.

    Very Good
    These muffins are seriously good! I didn't use the orange or banana flavouring, so maybe if I had they woulda received 5 stars. For those of you used to big muffins (like me!), the small muffin size takes some getting used to, but keeps the calories in check for sure! - 8/12/09
