Introduction

This is a quick and easy recipe to make for 2 people (or multiply for more) and chances are you have all the ingredients you need already! It's definitely cheesey and quite filling and I usually serve it with some veggies on the side. ENJOY! Ingredients

    4oz Elbow Pasta
    1 cup Frozen Broccoli
    1 cup Almond Breeze Unsweetened Original (*or 1 cup skim milk*)
    1/4 tsp Garlic powder
    1/4 tsp salt
    1/4 tsp white pepper (black is fine too)
    2 Tbsp flour
    1 tsp Dijon Mustard
    2 Tbsp Shredded/Grated Parmesan Cheese
    1/2 cup Shredded Cheese (ex: cheddar or jack)

    *using skim milk will add 20 calories per serving to the recipe

Directions

Cook the pasta in boiling water for about 4 minutes then add the frozen broccoli to the water w/the pasta and cook an additional 4-5 minutes until the broccoli is tender and the pasta is cooked to your liking. Drain the water.

While that is going on, simmer 3/4 cup (6oz) of the almond breeze or skim milk in a sauce pan making sure not to boil. In a small bowl, whisk together the remaining 1/4 cup (2oz) of almond breeze/milk, garlic powder, salt, pepper and flour. Pour this flour mixture into the simmering milk and whisk constantly for 2-3 minutes until the sauce gets thick. Remove the sauce from the heat and whisk in the dijon mustard, parmesan cheese and shredded cheese.

When the sauce mixture is thoroughly combined, add the pasta and broccoli to it and mix well until everything is coated. Put it back on the stove and heat through while mixing for about a minute and serve.
