Introduction

Nice and simple dish- throw it all in a dish in the oven and let it bake. It's also easy to make more or less- just throw in an extra breast & veg for more people. Ingredients

    Place 2 chicken breasts (or one per person), cut sweet potato & onion into chunks, slice peppers & zucchini into big pieces and throw it all in together with the whole garlic cloves and two sprigs of thyme, and drizzle over the olive oil.

    Cook for 15 minutes, then remove and add the zest and juice of the orange, and throw back in the oven until cooked through.

    Remove the garlic cloves and thyme sprigs and serve... that's it!

    I cook a batch of it and reheat it the next day for a meal- still tastes great!

Directions

Can be adjusted to make as much (or as little) as you want. This version makes approx 2 servings.

Put in the oven at about 200 degrees for 15 minutes, then add the orange juice & zest and return to the oven until the chicken is cooked through- approx another 15 minutes.
