Fresh, Crisp Salad Fresh, Crisp Salad
Number of Servings: 4

Ingredients

    Pineapple Chunks (canned or fresh) If canned make sure it is in it's own juice 1 cup
    Cucumber chunks 1 cup
    Scallion (green onion) 1/4 cup
    Balsamic Vinegar 1 tbsp or to taste

Directions

1. Peel fresh pineapple and cut into chunks.
2. Peel cucumber and cut into chucks. (remove seeds if desired).
3. Chop green onions.

Mix all ingredients together, add balsamic vinegar and stir together. Can be eaten right away, however it is best chilled.

Makes 4 4oz servings as a snack or 2 1-cup servings as a side dish.

    This is so simple, but it's great. And I'm going to play with it to add some protein, maybe tofu, for those with banded stomachs who need lots of protein. Nice job. - 2/16/11
