Ingredients

    1/4 cup plus 2 tbsp. whole wheat pastry flour
    1/4 cup graham flour
    1/4 cup soy flour (can be replaced with rice/potato flour if you are soy intolerant)
    2 tbsp. wheat bran
    1/2 tsp. salt
    1/2 tsp. cinnamon
    1.5 tsp. baking powder
    1/4 cup unsweetened applesauce
    1 tsp. raw honey
    1/2 cup non fat greek style yogurt
    2 tbsp. low fat milk
    2 egg whites
    1 tsp. vanilla extract
    Pinch cream of tartar

Directions

*Combine the egg whites, pinch of salt, and cream of tartar in a blender and process until fluffy (about a minute).
*Add the applesauce, vanilla, milk, yogurt, and honey and process until smooth.
*In a separate bowl sift the flours and bran together with the baking powder. Then add the dry ingredients to the blender and process until well combined.
*Bake in a waffle iron according to the manufacturer's directions.
*Makes five square belgian-style waffles.
