Ingredients

    1 C fat free sour cream
    2 tsp dried dill
    3 Tbsp scallions, finely chopped
    2 Tbsp Dijon mustard
    2 Tbsp lemon juice
    1 1/2 lb salmon fillet with skin, cut in center
    1/2 tsp garlic powder
    1/2 tsp black pepper
    as needed fat free cooking spray

Directions

1. Whisk sour cream, dill, onion, mustard, and lemon juice in small
bowl to blend.
2. Preheat oven to 400 degrees F. Lightly oil baking sheet with cooking spray.
3. Place salmon, skin side down, on prepared sheet. Sprinkle with
garlic powder and pepper, then spread with the sauce.
4. Bake salmon until just opaque in center, about 20 minutes.

    I love salmon, and this topping was the perfect addition. I made this salmon, spicy sweet potato "fries," and steamed broccoli, and had a deliciously satisfying dinner in about 30 minutes. Yum! I'll be making this recipe often! - 6/28/09

    This looks great. I love having left over salmon for breakfast too. Had some today. I will try this one tomorrow since I have all the ingredients. I make one very similar using fat free yogurt and sour cream in equal parts. - 6/27/09
