Introduction
Low in fat, high on taste! This is so easy and quick to make, too! Basically, use 1 tablespoon of parmesan cheese per fillet that you will broil. Add just enough mayo to form a thick paste, then thin it with the lemon juice. Add seasonings to your liking. YUM!!(Other recipes call for butter, but I find that if I use butter, it drains off of the fish and onto the pan. Leaving the butter out helps to keep the cheese topping on the fish!) Ingredients

1 lb tilapia fillets
1/4 cup parmesan cheese
1 tbsp Lite Mayo
1 tbsp lemon juice
Italian seasoning
1/4 tsp fresh ground sea salt
1 tsp fresh ground black pepper
Directions
Create a paste of cheese, mayo, lemon juice and seasonings until it's a spreadable consistency. If needed, add more lemon juice.
Rinse tilapia fillets and pat dry (this helps to reduce the fishy taste). Place on a broiler-proof pan (jelly roll type pan with wire inside the rolled bead works well). Broil on High for 3 minutes a 3-5" from the upper element. Remove from oven. The tilapia should appear opaque but not fully cooked.
Spread cheese paste evenly over the top of the fillets and place back into oven for 2 minutes or until cheese is browned to your satisfaction. Serve immediately.
