Introduction
This is a variation on traditional tzimmes, a carrot-sweet potato-prune stew. I've added chicken breast to make this a one pot entree. Just add a green salad and you have a complete meal! Ingredients

1 small onion, diced
2 cups yams, cut into large dice
1 lb. chicken breast, cut into large dice, all visible fat trimmed off
12 pitted prunes or 1/2 cup of mixed dried fruit
24 baby carrots
3/4 cup orange juice
1/2 cup chicken stock
1 package plain whole wheat couscous
Directions
1. In a large saute pan over medium high heat, brown the chicken on all sides. Remove from pan and set aside.
2. Lower heat to medium and add the onions. Cook, stirring frequently, until just translucent.
3. Return the chicken to the pan. Add the remaining ingredients, turn the heat to low and simmer 20 minutes until yams are soft, chicken is cooked through, and the prunes or dried fruit have plumped.
4, Cook the couscous according to package directions.
5. Serve the chicken mixture over the couscous and serve.
