Ingredients

    1 sixteen ounce package of OreIda Potatoes Obrien
    14 Eggs
    2 cups Cheddar cheese
    1 lb sausage
    1 bunch of green onions

Directions

In a 9x13 pan place the potatoes Obrien. Chop green onion and place on top of potatoes. Brown sausage in a skillet and crumble on top of potatoes and onions. In a bowl beat together the eggs and salt and pepper to taste. Add garlic powder if you like. Pour egg mixture over the potatoes and then top with cheese. Place in a 350 degree oven and bake for about one hour. This can be put together the night before and placed in refrigerator to be baked in morning. It also reheats well the following morning. Cut casserole into 12 squares and serve for breakfast or brunch.
