Onions, raw, 1 large (remove)
Garlic, 3 clove (remove)
*Canola Oil, 1 tbsp (remove)
*Peppers, sweet, red, fresh, 1 medium (approx 2-3/4" long, 2-1/2" (remove)
*Cumin (ground), 2 tsp (remove)
*coriander, ground, 2 tsp (remove)
*Ancient Harvest Traditional Whole Grain Quinoa, 1 serving =.25 cup dry, 1 cup (remove)
Water, tap, 1.66 cup (8 fl oz) (remove)
Basil, 8 tbsp (remove)
Yellow Sweet Corn, Frozen, 1.5 cup kernels (remove)
*Pine Nuts, 1.5 tbsp (remove)
Directions
In a saucepan, saute the oinoin and garlic for about 5 min - till soft. add the peppers, cumin and coriander and saute an additional 5 min stirring occcasionsally.
Rinse quinoa and then add the quinoa and water to the saucepan, cover tightly and simmer gently for 15 minutes. Stir in the bail and corn and cook anotehr 5-10 munutes till the quino is tender.
Fluff the pilaf, add salt and pepper to taste and top with toated pine nuts.
