Introduction

Ingredients

    3 Veggie sausage (I use Cauldron Foods. Quorn or Linda McCartney will work just as well)

    50g onion
    50g carrot
    50g spinach
    50g zucchini
    1 medium tomato
    100g cooked rice
    1 tspn chilli flakes

Directions

Serves 1 as main dish

1) Dry fry onion until soft

2) Add a little water then the rest of the veggies, the chili and the sausage.

3) When veggies are a little soft add rice - keep stirring so all ingredients are cooked.
