Ingredients

BATTER:
1 1/3 C All-purpose unbleached FLOUR
2/3 C Whole Wheal FLOUR
1/4 C SUGAR
1/4 C SPLENDA
1 Tbsp BAKING POWDER
1 C Dried CRANBERRIES
1 C Frozen, Unsweetened BLUEBERRIES
1/2 C Chopped WALNUTS
1 C Skim MILK
1/4 C Unsweetened APPLESAUCE
TOPPING:
1 Tbsp SUGAR
1 Tsp ground CINNAMON
Directions
Preheat oven to 500. Spray 12-cup muffin pan with olive oil cooking spray. In large bowl mix dry ingredients and add fruit and nuts and mix until coated. In seperate bowl mix liquids until light. Pour wet into dry and stir only until mixed. Do not over mix. Fill muffin cups 3/4 full. Put mufins in oven and DROP HEAT TO 400 IMMEDIATELY. Bake 20 minutes or until golden brown. Remove from pan and cool on wire rack.
I like to make these on the weekend and freeze them for snacks throughout the week.
