Ingredients

    1 large onion, coarsely chopped
    1 fresh jalapeno pepper, seeded and minced
    1 clove garlic, peeled and chopped
    1 pkg. (1.25 oz.) chili seasoning mix
    3 Tbs. olive oil
    1 lb. cooked turkey, cubed
    1 can (14.5 Oz.) diced tomatoes
    1 cup vegetable juice, like V-8 (I just add the whole small can it is a little more than 1 cup.) (I also use the spicy flavor to give it a little more of a kick)
    1 zucchini, cut into 1" cubes
    1 can (15 oz.) kidney beans, drained

    You can substitute other vegetables for the zuchinni. I have used yellow squash, okra, and corn.

Directions

In saucepot over medium heat, cook onion, jalapeno pepper, garlic and chili seasoning in oil 5 min., or until soft. Add next ­five ingredients, cover and simmer 15 min., or till vegetables are tender.

Since this recipe is so low in calories (under 200 a serving)I usually add a dab of sour cream. YUMMY!
