Ingredients

    1/2 cup olive oil
    1/3 cup lime juice
    1 teaspoon slenda
    1/2 teaspoon salt
    1/4 teaspoon cumin
    3 cloves of garlic
    2 lbs of skirt steadk, chicken breast or pork tenderloin
    1/4 cup vinegar
    1 teaspoon oregano
    1/2 teaspoon black pepper
    1/2 tablespoon paprika
    12oz of beer
    1 large onion sliced
    1 large green, red or yellow pepper sliced
    flour tortillas

Directions

Mix all the spices together. Add beer to complete the marinade. Add meat, sliced green peppers and onions to marinade. Marinade for at least one hour. The longer you marinade it the better the flavor.

Take onions and peppers out of the marinade and put in foil. Preheat the grill or broiler. Cook the chicken pieces 6 or 7 minutes on each side on the grill, or 2 to 3 inches from heat source in broiler.

Heat tortillas according to package directions. For each fajita, put a pepper and onion slices on the bottom half of the torilla. Cut chicken pieces inot diagonal strips and add to tortilla. Fold top half of tortilla over filling.

    I tried this recipe with tofu. It smelled incredible while cooking, but the tofu didn't have the flavor I was expecting for a fajita. Perhaps next time I will marinade AND bread the tofu. I recommend this recipe only for meat; I'm sure it's quite wonderful! - 10/8/09
