Ingredients

    6 medium bell peppers (not included in calorie count - see notes in cooking instructions) top and seeds removed
    20 oz. lean Jennie O ground turkey
    2 14.5 oz cans diced tomatoes in juice
    2 cups fresh spinach
    1/2 cup chopped onion
    1/2 cup diced celery
    1/2 cup corn
    2 tsp minced garlic
    1 tsp dried oregano
    1 tsp dried rosemary
    1 tsp dried basil
    1 tsp ground sage
    Pepper to desire
    1.5 cups cooked rice
    1/2 cup fat-free shredded mozzarella

Directions

In a large skillet, blanch peppers for about 3 minutes in boiling water. Drain and rinse. Set aside.

In large, non-stick skillet slightly season and brown turkey. Remove and set aside.

In same skillet drain juice from tomatoes and combine veggies (saving spinach till very last) and summer till all veggies are tender and sauce thickens (about 5 minutes).

Stir in tomatoes, turkey and rice. Mix well. (Stir well so spinach can get distributed evenly)

Stuff into peppers. Bake at 350 degrees F for 30 minutes. Top each pepper with cheese. Return to oven to melt cheese.

Makes 6 servings.
