Ingredients

1 Cup couscous (whole wheat)
1/2 cup dried fruit
1 cup boiling water
5 tbs olive oil divided
1 large pepper cut up
1 large onion sliced
1 1/2 tsp cumin
1/2 tsp ginger (minced)
1/4 tsp cinnamon
salt and pepper
1 16 ounze can chickpeas drained
1/4 c cilantro
3 T rice wine vinegar
3 T frozen orange juice concentra
Directions
Place couscous and dried fruit in bowl. Add 1 cup boiling water. Cover and let set 5 minutes.
Heat 2 Tbs. oil. Saute peppers and onions. Add cumin, ginger, cinnamon, salt and pepper. Add to couscous with chicpeas and cilantro.
Whisk 3 T olive oil with seasoned rice vinegar and orange juice. Toss to coat. Cover and refrigerate until you are ready to serve
