Introduction

Vegetarian tacos with quinoa and black beans. I made these out of a mixture I originally made for veggie burgers (but didn't care for it as burgers - much better as tacos!). Ingredients

    Corn taco shells
    1 cup dry quinoa, cooked
    1 cup black beans cooked
    2 tbsp flax seeds
    lettuce
    tomatoes
    salsa
    cheese (optional)
    chili powder
    cumin
    lime juice
    garlic
    cilantro

Directions

Cook quinoa. Blend in blender or food processor black beans, quinoa, flax seeds. transfer blend into skillet, season with chili powder, cumin, lime juice, garlic, and cilantro to taste.

Put in taco shells, top with lettuce of choice, tomatoes, cheese if desired, and salsa.

Makes at least 6 tacos (nutritional info is for 6 only with cheese).
