Introduction
This is a recipe I modified from one I found when I was a newlywed. It's SO GOOD! This is a recipe I modified from one I found when I was a newlywed. It's SO GOOD!Number of Servings: 6
Ingredients

6 chicken breasts
3 T. Smart Balance Butter Spread (or margarine)
1/3 c. honey
2 T. prepared yellow mustard
1/2 t. salt (can omit)
1 t. curry powder
6 cups of cooked white or brown rice
Directions
1) Take off any skin that is on the chicken and throw away.
2) Place chicken in glass oven-safe dish.
3) Combine Smart Balance butter spread, honey, mustard, salt, and curry in a small bowl.
4) Using a basting tube or brush, baste the chicken every 15 minutes or so, while cooking chicken at 350 degrees.
5) Serve chicken with rice. (If using chicken breasts, you can cut them up casserole-style into the rice.) We like to make and additional amount of marinade-sauce to go over the rice.
6) SO ABSOLUTELY AMAZING! My children LOVE this dish! Serving size: one piece of chicken and one cup of rice per person.
If you're looking to make the dish more cheaply, buy other chicken parts, like leg quarters, or a fryer.
