Introduction

A great quick soup that's very filling. A great quick soup that's very filling.
Number of Servings: 4

Ingredients

    13 oz package of frozen cheese tortellini
    16 oz can of small white or navy beans
    2 cups coarsely chopped fresh baby spinach
    4 cloves minced garlic
    4 cups fat free, low sodium chicken broth
    1 cup water
    1 tsp sage or rosemary leaves
    1/4 cup grated parmesan cheese

Directions

Cook the tortellini according to package directions and drain, do not overcook!

Meanwhile, in a large saucepan, bring the broth, sage or rosemary, garlic and water to a boil. Once it is boiling, stir in the beans and spinach. Reduce heat and simmer for 5 minutes.

Add the drained pasta and simmer for another minute. Serve with 1 tbsp grated parmesan sprinkled on top.

Makes 4 servings.
