Introduction

This is a wonderful flavored beef vegetable soup with old-fashioned goodness. I use hamburger, minute steak, or round steak. It's easy to dump all ingredients and let it cook. To do so I choose stew vegetables and forego all of the cutting and dicing of the other veggies and just increase the amount of frozen veggies used. Ingredients

    1# boneless round steak, cut into 1/2-inch cubes
    1 can (14-1/2 ounces) diced tomatoes, undrained
    3 cups water
    2 medium potatoes, peeled & cubed
    2 medium onions, diced (may use less/to desired taste)
    3 celery ribs, sliced
    2 carrots, sliced
    3 beef bouillon cubes
    1/2 tsp. dried basil
    1/2 tsp. dried oregano
    1/2 tsp. salt
    1/4 tsp. pepper
    1-1/2 cups frozed mixed vegetables


Directions

In a slow cooker, combine the first 12 ingredients. Cover & cook on high for 6 hrs. Add vegetables; cover & cook on high 2 hrs. longer or until the meat & veggies are tender. Yield 8-10 servings (about 2-1/2 quarts)
