Introduction

A rich and creamy, cool and fruity dessert for under 200 calories! I made mine with four kinds of fresh berries, but any fruit will do - use your family's favorites. Ingredients

    1 cup graham cracker crumbs
    1/2 stick butter, melted
    8 oz. reduced fat cream cheese (not fat free), softened
    14 oz. can sweetened condensed milk
    1 tsp. vanilla extract
    1/2 cup fresh lemon juice (juice of approx. 2 lemons)
    1 cup sliced fresh strawberries
    1 cup fresh blueberries
    1 cup fresh raspberries
    1 cup fresh blackberries

Directions

To make crust:
Combine graham cracker crumbs and melted butter. Spoon into 16 tart shells and press into bottom and sides of each. Chill until set OR bake for 6-8 minutes at 350 degrees and let cool. (Alternately, you can buy pre-made graham cracker mini-pie shells; this will change the calorie count.)

To make filling:
With a mixer, beat the cream cheese until light and fluffy, 3-4 minutes. Add condensed milk and vanilla and stir to combine. Add lemon juice a little at a time and stir to combine. Mix on low speed until smooth. Divide evenly among tart shells. Chill 2 hours or until set.

Top with strawberries, blueberries, raspberries, and blackberries OR substitute your favorite fresh fruit. Optional: add a dollop of whipped cream on top of fruit (not included in nutritional information).

Makes 16 tarts.
