Introduction

Ingredients

    1 cup chopped onion
    1 clove garlic
    1 cup chopped celery
    2 cups chopped mushrooms
    1 cup chopped cabage
    1 tin red kidney beans
    2 tins chopped tomatoes
    1 tin sweetocrn
    2 vegie stock cubes in 400ml boiling water
    200ml soy milk (Alpro soya light used here)
    tsp brown sugar
    chilli flakes, red pepper and salt to tste

Directions

Fry the onions and garlic together until translucent, then add the other vegetables. Saute for a few minutes until cooked through then add the quorn mince and cook for a few minutes more.

Add the remaining ingredients and simmer over a low heat for 30mins. Season to taste.

This makes 8 1.5 cup servings.
