Introduction
The olive oil in this makes it seem like it's a little high on fat, but served over grated yellow squash, it makes a healthy and filling alternative to pasta. Plus, since it's all raw, all of the veggies retain all their vitamins! It's the best tasting way to get all your veggies in one sitting! Even my five year old loves this. Ingredients

12-16 Roma Tomatoes
1/2 Red Pepper
4-5 Sprigs Fresh Basil
1/4 cup Olive Oil
3 Carrots
1/4 of an Onion (I use white, but red is good too)
8 Cloves Garlic (adjust to taste!)
6 T Nutritional Yeast (optional)
salt and pepper to taste
Directions
Quarter tomatoes and blend in blender on low until smooth. Add sliced carrots, chopped red pepper, and onion, and continue to blend. Add remaining ingredients, blending until smooth. Note that nutritional yeast is optional, but adds protien and lots of B vitamins, and it tastes great!
That's it! Serve over grated yellow squash for a stove free summer dinner! Feel free to experiment and add your favorite veggies to this recipe!
