Introduction

Amazingly low calorie, low fat, yet still delicious recipe for enchiladas. I added mushrooms, green peppers, and onions to the recipe, but you can add anything you like. Ingredients

    1 pkg. (8 oz.) fat free cream cheese, softened
    1 pkg. (7 oz.) shredded non-fat cheddar cheese
    2 green onions, sliced
    6 flour tortillas, whole wheat (6 in.)
    1 cup salsa
    mushrooms, onions, green peppers
    Any other veggies you'd like

Directions

Makes 6 servings (1 filled tortilla each)

Heat oven to 350 degrees
Beat cream cheese in small bowl with mixer until creamy.
Add 1 cup cheddar cheese & onions--mix well. Spread down centers of tortillas and roll up. Place, seams down, in 11x7'' in. baking dish and top with salsa.
Cover and bake 20-25 minutes (or until heated through).
Sprenkle with remaining cheddar cheese.

    O.K.
    It was just too much cream cheese for my tastes. I doubled the recipe (maybe that was the problem?) but noone in my family liked it and it got thrown away. :/ I'll keep the idea, but tweak the recipe next time. - 3/10/11
