Introduction

Number of Servings: 4

Ingredients

    1/4 cup water
    1/4 cup lite soy sauce
    juice of 1 lemon
    juice of 1 lime
    1/2 tsp dry mustard
    1 jalapeno pepper, split in half lengthwise, seeded
    1/2 small onion, quartered
    1 clove garlic
    1/4 cup cilantro leaves, fresh, lightly packed
    1/4 tsp dried thyme leaves
    4 6-ounce chicken breasts, boneless, skinless

Directions

In food processor or blender, combine all ingredients except chicken. Process until onion and pepper are minced. Pour into a shallow dish or zip-seal 1-quart plastic bag.

Add chicken, turn to coat with marinade. Cover dish with plastic wrap or seal bag. Marinate in the refrigerator 4 hours to overnight, turning chicken occasionally.

Prepare grill. Remove chicken from marinade. Grill chicken 15 to 20 minutes, turning every 5 minutes, and basting frequently with marinade.

    I made this with chicken thighs, and it turned out very good. I will make it again. The marinade was easy to make and it was not too hot, even with the jalapeno. - 8/30/09
