    1 Tbs. Cranola oil or EVOO
    1 small onion, chopped
    1 Red Pepper, chopped
    1/2 c. baby lima beans
    1/2 c. corn
    1/2 tesp. Thyme, dried or fresh
    1/2 tesp.Salt, optional
    1/4 tesp. pepper
    1/8 tesp. Cayenne or red pepper
    1 c. egg substitute or 4 large eggs, beaten
    until they are foamy
    2 Tbs. shredded low fat cheese


Heat oil, add onions and vegys, cook until tender.
Add thr seasonings, stir well and smooth out into a circle in fry pan. Pour beated eggs or egg substitute over vegetables, tilting pan to spread the eggs. Cook until almost firm, then add the cheese and continue cooking until firmness is reched.
Slide onto a large plate and cut into 4 triangles.
