    1/2 cup oil-packed sun-dried tomatoes
    1/4 cup white wine vinegar
    1 garlic clove, minced

    1 pound whole wheat fusilli pasta
    12 ounces tomatoes - chopped
    16 ounces of water-packed mozzarella cheese, drained and cut into 1/2 inch pieces
    1 cup basil, thinly sliced
    1 cup freshly grated Parmesan cheese
    1/2 cup minced pitted black olives


Blend first four ingredients in processor until tomatoes are coarsely chopped. Set dressing aside.

Cook pasta al dente. Add dressing to hot pasta, toss to coat. Cool, stirring occasionally. Add other ingredients and toss. Season with salt and pepper.
