Introduction

When you don't really feel like pancakes but you really need to use up that pancake mix! When you don't really feel like pancakes but you really need to use up that pancake mix!
Number of Servings: 12

Ingredients

    1 cup Fiber One pancake mix
    1 cup of fat free milk
    1 pint of fresh blueberries
    1/4 cup of fat free cottage cheese w/ pineapple (it makes the muffins slightly sweeter and more moist)

Directions

Preheat the oven to 375F. Combine the pancake mix and milk until batter is well blended. Stir in the cottage cheese and then add the blueberries. Line a muffin pan with paper liners (or not if you don't have any on hand) and fill them about 2/3 way up. Bake for 20-25 minutes until tops are nice and brown. let stand in the oven for 5 more minutes and then remove them to cool down.

Makes about 12 muffins (depending on how much fruit you use).
