Introduction

The tiny 'Velchi'(Cardamom) and Rajaali (Royal)Bananas are a very famous variety from Vasai or Bassein as the British called it.This is a beautiful town near Mumbai blessed with fertile soil and good climatic conditions.Vasai is also famous for it's Vegetable farms,Banana and Coconut Plantations.
The Rajaali variety is used in many preparations but this is one preparation which is popular snack on the days of various Fasts.

Number of Servings: 6

Ingredients

    6 Rajaali Bananas(8"-9")
    OR
    6 large Yellow skinned Bananas(8"-9")
    1cup shredded Raw Coconut
    0.75 cup shredded Jaggery(Gul/Gud)
    OR
    0.5cup Brown Cane Sugar
    Salt to taste
    5-10 hot Green Chillies(according to taste)
    5tbsps.Claried Butter(Ghee)
    OPTIONAL
    1 small bunch fresh Coriander(Cilantro)Leaves

Directions

Peel and cut the Bananas into 3 pieces each.Make 2 deep gashes at one end keeping the other end intact.Chop the Green Chillies and if using Coriander Leaves fine.
Mix together the shredded Raw Coconut,shredded Jaggery,chopped Green Chillies and Salt well.Add chopped Coriander Leaves if using.Stuff this in the Banana pieces. Reserve whatever little Mixture remains to use later.
METHOD
Heat Ghee in a wok.Lower flame and add the Cumin Seeds.When these sputter add the Banana pieces and turn over gently to brown evenly in the seasoned Ghee.Sprinkle in the remaining Mix over the Bananas.Cover and steam on low flame till lightly browned on all sides.
TIPS
Bake these after applying Ghee on all sides in a 180 Degrees Celsius oven for 10 minutes till browned evenly.This is a lighter way of cooking this.
