Introduction

This ultra cheap recipe came from 5dollardinners.com, although it costs less than $2 to make. I modified it to add frozen corn instead of serving corn on the cob on the side. Ingredients

    2 15 oz cans black beans, rinsed & drained
    1 cup brown rice
    1 tbsp extra virgin olive oil
    15 oz can diced tomatoes, no salt added
    1 tsp cumin
    1 tsp garlic powder
    1/8 tsp salt
    dash black pepper
    1 cup frozen corn kernels

Directions

Place oil in bottom of slow cooker, then stir in rice until lightly coated with oil. Add drained & rinsed beans on top, then add undrained can of diced tomatoes. Add spices, stir well, cover & cook on low for about 6 hours. Stir in frozen corn and cook for about another 15 minutes or until corn is heated throughout.

    This was great! I didn't have 2 cans of black beans, so I substituted a can of pinto beans. I topped it with very finely shredded cheese and fat free sour cream. Delicious and filling! - 1/17/10
