This is a very yummy crispy chicken entre, which is so low in calories, it's easy to satisfy family and guests and still watch the calories. (This is so rich and delicious that no one will ever know) .The dark thigh-meat makes it rich and juicy, and goes great with coleslaw and whipped cauliflower. Ingredients

    12 thighs Chicken, bone and skin removed
    Crispy Bread Crumbs, Progresso, 1 cup
    Salt, 1 tsp, or to taste
    Red chilli-pepper flakes or cayenne 1 tbsp
    *Cumin seed, 1 tsp, or to taste
    Turmeric, ground, 1 tsp / to taste
    Thyme, 1/4 tsp (dry works well, but not ground)

Directions

Spray 2- 13 inch, flat (pyrex) dish with Pam or other spray oil.
Pound the chicken to tenderize but not enough to fall apart.
In a medium bowl, mix well together the bread-crumbs and all other ingredients.
For the sake of ease, divide the bread-crumb mixture in half and place half the mixture in a 1 gallon zip-lock bag.
Place 6 pounded thighs in bag, seal and toss to coat well.
Spread out in 1 pyrex dish, and then do the same with the rest of the thighs and bread-crumbs and spread out in the 2nd dish.
Bake for 35 minutes at 375.
Turn the chicken once and bake for another 10-15 minutes or until cooked.
