Celery, raw, 1 cup, sliced
Carrots, raw, 1 cup, chopped
Onions, raw, 2 medium cut into wedges
Peppers, sweet, red, fresh, 1 large Cut into slices
Garlic, 4 clove minced
Chicken Drumstick, 12
Chicken Broth, .5 cup
White Wine, 1/4 cup
Quick Cooking Tapioca 2 tbsp
Bay Leaf, 2
Oregano, ground, 1 tsp
Granulated Sugar, 1 tsp
Salt, .5 tsp
Pepper, black, .5 tsp
Canned Tomatoes, 1 can diced
Tomato Paste, .33 cup
Directions
Makes six servings
1. In a 6 quart slow cooker combine mushrooms, celery, carrot, onions, sweet pepper, and garlic. Cover vegetables with chicken. Add broth, wine, tapioca, bay leaves, oregano, sugar, salt, and black pepper.
2. Cover and cook on low heat settingfor 6-7 hours or on high heat setting for 3 to 3 1/2 hours
3. remove chicken and keep warm. Remove bay leaves and discard. If using low heat setting, turn to high heat setting. Stir in undrained tomatos and tomato paste. Cover and cook 15 minutes longer on high-heat setting. to serve spoon vegetable mixture over chicken.
