    4-5 LARGE EGGS
    3 TABLESPOONS OLIVE OIL

Directions

HEAT LARGE SKILLET

SAUTE ONION, GARLIC & ZUCCHNINI IN OLIVE OIL IN SKILLET UNTIL ZUCCHINI IS EXTREMELY SOFT (NOT BROWNED) THIS MAY TAKE 20-25 MINUTES ON A LOW/MEDIUM HEAT

CRACK EGGS IN A BOWL AND WHIP WITH PARMESAN CHEESE

ONCE ZUCCHINI IS SOFT ADD WHIPPED EGG MIXTURE TO SKILLET

STIR ZUCCHINI AND EGG UNTIL EGG IS COOKED THROUGH (SOFT NOT HARD SET)
