Introduction

moist carrot bran - high fibre moist carrot bran - high fibre
Number of Servings: 11

Ingredients

    1 1/2 cup whole wheat flour
    1 1/2 cup all bran cereal
    1/2 cup splenda ( 24 teaspoons)
    1 tbsp. ground cinnamon
    1 tsp. baking powder
    1 tsp baking soda
    1/4 tsp. salt
    1 cup raisins
    1 cup grated carrot
    1 3/4 cup soured 1% milk (lemon juice 1 tsp)
    1/4 cup canola oil
    1 egg
    grated rind of 1 orange or lemon

Directions

1. in large bowl, stir together flour, cereral, splenda, cinnamon, baking powder, baking soda, salt, raisins and carrots.

2. add soured milk, oil, egg, orange rind, stirring until just combined.

3. spoon into greased non-stick muffin tins. bake at 400F oven for 20 minutes or until tops are firm to the touch.

    i made these 3 times and love them i don't put splenda or sugar or oil in i put in frozen cranberries thawed and a whole orange ground up and chopped nuts mmmm - 11/11/07
