Ingredients
-
3 ripe avocados, peeled and pitted
juice of one-half lemon
1-1/2 cups sour cream
1 pkg taco seasoning mix (1.25 oz)
1 can refried beans, fat free
1 can (4 oz) chopped green chili peppers
5 TBS sliced black olives
1 cup chopped ripe red tomato
1/4 cup finely chopped spanish onion
1/2 - 3/4 cups shredded cheddar cheese
Directions
Coarsely chop / mash avocado and mix in the juice of one-half lemon and salt and pepper to taste - set aside. In another bowl, mix 1 can (approx 1-1/2 cups) refried beans with the small can of chopped green chili peppers - set aside. In a third bowl, combine sour cream and taco seasoning mix - set aside. To assemble, choose either one large party platter or two smaller platters. Spread refried bean mixture on bottom of platter. Top with mashed avocado mixture and spread to cover beans. Top avocado layer with sour cream mixture, again spreading to cover all. Sprinkle the olives, then onions, then tomatoes over the sour cream mixture. Top that by sprinkling over all the shredded cheddar cheese. Serve immediately or cover and refrigerate until ready to tote or serve.
