Number of Servings: 8

Ingredients

    2 Boneless skinless chicken breasts cut into bit size strips
    1 Tbsp extra virgin olive oil
    1 large onion diced
    1 large carrot diced
    2 celery stalks diced
    6 gloves garlic minced
    1 Tbsp fresh oregano
    1 tsp basil
    8 Roma Tomatoes diced
    1 yam or sweet potato baked until fork tender then diced
    1/4 cup water
    1 lb Brown Rice Penne Pasta

Directions

Heat olive oil in a very large pan over medium heat add diced onions, carrots and celery and saute until soft but not browned. Add garlic, herbs and chicken saute for a couple minutes, add water, tomatoes, yams bring to a boil, cover pan reduce heat and simmer 20 minutes.

Meanwhile bring a large pot of lightly salted to a boil and cook pasta until al dente follow package directions.

When pasta and chicken are done toss together and serve.
