Ingredients

Chicken Breast, about 9 oz (cut into 3 wedges, then smashed down with a tenderizer to about 1/4 inch thick)
6 oz of whole wheat angel hair pasta, cooked, and drained
1/4 cup reserved pasta water
6 tbs EVOO
1 yellow bell pepper, sliced thin
1 orange bell pepper, sliced thin
1 medium onion, sliced
4 cloves of garlic, minced
1/4 cup pesto
Directions
Slice up onion and peppers and transfer to a baking sheet , spray veggies with non stick cooking spray. Sprinkle salt and peper over the veggies. Bake on 350 for about 15 minutes. Remove from oven.
Bring water to boil and cook pasta. While cooking pasta, place 2 tbs of olive oil in a pan over medium heat. Dredge chicken very lightly in flour and then add to olive oil. Cook until chicken has browned on both sides and is cooked through, about 3-5 mins per side. When chicken is done, remove from pan and set aside. After chicken has slightly cooled, chop into bite size pieces. Add roasted veggies, minced garlic, cut up chicken, cooked pasta, and 4 tbs Olive Oil. Heat over medium until everyhing has combined and garlic is fragrant. Meanwhile combine pesto and reserved pasta water; pour over pasta mixture. Toss and serve.
