Ingredients

    1 lb ground beef
    1 envelope taco seasoning
    1 cup water
    2 cups cooked rice
    1 can (16 oz) refried beans
    2 cups (8 oz) shredded cheddar cheese, divided
    12 flour tortillas, 8 inches
    1 jar (16 oz) salsa
    1 can (10 3/4 oz) cream of chicken soup, undiluted

Directions

Cook beef and drain. Stir in taco seasoning and water. Simmer for 5 minutes. Stir in rice. Cook and stir until liquid is absorbed. Spread about 2 T refried beans, 1/4 cup beef mixture and 1 T cheese on each tortilla; roll up and place in pan. Combine salsa and soup and pour over enchiladas. Sprinkle with cheese. Bake at 350 degrees for 20-25 min or microwave 4 or 5 minutes till heated through and cheese is melted. Makes 12 enchiladas. May freeze half. Thaw overnight in refrigerator and then cover and bake 350 degrees for 30 min; uncover and bake 5-10 min longer.
