Ingredients

    1 Pounds Dry Black Beans
    1 Tbsp Olive Oil
    1 Medium Onion
    2 Carrots
    4 cups vegetable broth
    4 cloves garlic
    6 jalapeno peppers (roasted and peeled)
    3 Limes
    Cumin (toasted seeds - or powder)
    Bunch of cilantro

Directions

Saute onions, carrot, garlic
Add presoaked black beans, cumin, and add broth
Simmer till beans are soft

Puree bean mixture plus peppers and lime juice

Add enough water to make 12 cups

Makes 12 one cup servings
