Introduction

This was originally an Applesauce muffin recipe that I tweaked to make a healthy breakfast muffin. This was originally an Applesauce muffin recipe that I tweaked to make a healthy breakfast muffin.
Number of Servings: 12

Ingredients

    1 Cup old fashioned rolled oats (not instant)
    1 cup non fat milk
    1 cup whole wheat flour
    1/2 cup brown sugar
    1/2 cup canned pumpkin
    1 egg (or 2 egg whites)
    1 tsp baking powder
    1/2 tsp baking soda
    1/2 tsp salt
    1 tsp cinnamon
    1/2 tsp pumpkin pie spice
    1 tsp granulated sugar
    1/2 cup raisins

Directions

Soak the oats in the milk for approximately 1 hour. Add all the dry ingredients into a bowl and whisk together. Add pumpkin and egg to the oatmeal mix and whisk together. Take wet ingredients and stir them into the dry ingredients making sure not to stir too much or muffins will be tough. Take raisins or dried fruit or any other goodies you want to add and fold them into the batter. Spoon into paper lined (or greased) muffin tin filling about 2/3 full. Bake in a preheated oven @400* for approximately 15 minutes or until toothpick inserted in center comes clean. Makes 12 muffins.
