Ingredients

    1 T. olive oil, 18 ounces chicken, cut in strips; red and green peppers (half of each, cut in strips); 18 baby carrots; 3 c. fresh cabbage, chopped; 2 stalks fresh broccoli, cut into spears; 1 c. chicken broth (low sodium, reduced fat), 2 cloves garlic, (minced), cooked pasta (approx. one half box)

Directions

Cook pasta according to package directions, drain, and set aside. Place olive oil in wok and add chicken. Cook chicken until all pink is gone, then add vegetables. Cook vegetables and garlic, stirring occasionally, to al dente; then add chicken broth and pasta. Simmer for 5-10 minutes, covered, stirring occasionally. Makes about 6 2-cup servings.
