Introduction

You can use whatever dressing you like to top this salad with. I use a balsamic vinegar and mustard mix. Ingredients

    1 cup whole wheat couscous, uncooked
    6 asparagus spears
    3 red pepper rings
    4 medium scallions
    1 tomato
    1 4oz fillet of salmon
    5 fresh basil leaves

Directions

Prepare the couscous as instructed. Allow the couscous to cool. Grill the salmon or lightly pan fry. Allow the fish to cool. Chop everything up and mix together. Eat cold. This makes about 2.5 servings
