Introduction

A frittata that is a mexican pizza! Not like the one from taco bell! A frittata that is a mexican pizza! Not like the one from taco bell!

Ingredients

    Egg substitute, liquid (Egg Beaters), 2 cup (remove)
    Onions, raw, 1 cup, chopped (remove)
    Avocados, California (Haas), .50 fruit without skin and seeds (remove)
    Black Bean Soup, 1 can (11 oz), undiluted (remove)
    Green Peppers (bell peppers), 1 cup, strips (remove)
    Red Ripe Tomatoes, 1 Italian tomato (remove)
    Cheddar or Colby Cheese, Low Fat, 1 cup, shredded (remove)
    Garlic, 4 clove (remove)
    *Egg white, 4 serving (remove)

Directions

Preheat to 400. Add garlic, onions and bell pepper for a few minutes. Add avocado, beans and tomatoes for another minute. Add eggs until almost cooked. Add cheese on top and bake for 15 mins. Top with salsa and enjoy!
