Introduction

Ingredients

1 onion (I prefer red onions)
3 ripe tomatoes
1 teaspoon Olive oil
2 eggs
2 slices of wholewheat bread
peper and salt to taste
Directions
Cut the onion and tomatoes in pieces.
Fry the onion, using a little olive oil. Put them on medium heat until nice and soft. Add tomatoes and let simmer.
Beat 2 eggs and add to the tomatoes and onion when these are almost done. Scramble the eggs through the mixture and let it set. Stir now and then.
Put on bread (toasted or not, to your preference)
Season to taste
BON APPETIT!
* For atkins-south beach people: the meal is quite filling without the bread!
* For low fat people: use cokking spray in stead of olive oil
* Easy to spice up with a dash of sweet chili sauce (add some calories/carbs)
* Easy to elaborate with more veggies, like zucchini, peppers, chilies etc.
