Ingredients

    1 small Pork Tenderloin (calculations for 1 pound)
    Barbecue Rub Seasoning
    1 10oz package Iceburg Lettuce Salad Mix
    2 cups Fresh Express Cole Slaw Mix
    1 small Red Onion
    1.5 cup Whole Sweet Corn
    1/4 cup Ranch Salad Dressing (I use O Organics brand)



Directions

Rub pork loin with barbecue seasoning. Prepare pork loin however you desire. I cooked it on the grill. I let it cool off quite a bit before putting on the salad, but it wasn't completely cold.

For Dressing, combine 1/4 cup Ranch dressing and 1 teaspoon Barbecue Seasoning.

Cut pork into strips. Thinly slice red onion. In a large bowl combine salad mix, cole slaw mix, and corn. Top with onion and pork. Drizzle with dressing and toss to coat.

Serves 4.
