Ingredients

    1 cup plain breadcrumbs
    1/3 cup freshly grated parmesan cheese
    2 tbsp fresh basil
    4 egg whites, lightly beaten
    2.5 lbs zucchini, sliced into 1/4 to 1/2 inch pieces (longish pieces are nice)
    1 - 29oz can tomato sauce
    1 cup part-skim mozzarella cheese, grated

Directions

Preheat oven to 400. Combine parmesan, basil & bread crumbs in pie plate
Dip zucchini slices in egg white (with a pinch of salt added). Dip the zucchini into the crumb mixture and cover thoroughly. Spray baking sheet with olive oil spray and place crumbed zucchini slices on tray. Spray tops of slices with olive oil spray. Bake for 15 minutes. Flip slices over and spray with olive oil again. Bake 15 minutes more. Put 1 cup tomato sauce on bottom of 9x13 baking dish. Top with baked zucchini slices. Cover with another cup of tomato sauce and 1/2 cup of mozzarella. Repeat layers. Return to oven and bake 20-30 minutes until hot and bubbly.

    I used 1/8th of the 9x13 pan for my serving size. I did a half cut lengthwise and then 4 cuts shortwise. Made a fairly nice size serving.
