Ingredients

2 eggs, lightly beaten
1/3 C buttermilk, lowfat
1/2 C unsweetened applesauce
1 1/4 C mashed banana
1C Splenda
1 C all-purpose flour
3/4 C whole wheat flour
1 1/2 tsp baking soda
1/2 tsp salt
1/2 C chopped pecans
Directions
Preheat oven to 325 F. Spray one 9x5 loaf pan with non-stick spray.
In a large bowl, blend together the eggs, buttermilk, applesauce and bananas. Sift together the Splenda, flour, baking soda and salt. Mix into banana mixture. Stir in pecans. Spread batter into prepared pan.
Bake one (1) hour or until a cake tester inserted in the center comes out clean.
Makes 12 (3/4 inch) slices.
**If you want to make this a more healthy treat, use only egg whites and whole wheat flour. The applesauce replaces the fat but you can replace the applesauce with the same amount of mashed cannelini beans for added fiber. The cannelini beans replace fat in dessert recipes and add alot of fiber. The taste is exactly the same with more benefits!!!
