Ingredients

    10 oz ground turkey
    1 cup chopped onions
    3 cloves of garlic, minced
    1 jalapeno, seeded and minced
    2 cans great northern beans
    2 cup chicken broth
    1 tbls. oregano
    1 tbls. cumin
    1 tbls. chile powder

    garnish options (not figured into nutritional info):
    chedder or monterey jack cheese
    lime wedges
    fresh cilantro
    sour cream
    salt and pepper to taste

Directions

Saute onions, garlic and jalapeno in olive oil over medium heat. Add ground turkey and brown. Add beans, and chicken broth and seasoning (feel free to reduce the amount of seasoning based on your preference). Smash some of the beans against the side of the pot to release starch (and thicken the soup). Bring to a boil and reduce to a simmer. Cook at least 30 minutes - longer if you like a thicker soup)

    This was my first time eating ground turkey and this recipe made it a very enjoyable experience. This recipe will become a regular on our menu here at home. :) I did not have chicken broth, so i subsituted with water and the broth was still very tasty. I also omitted the jalapeno.
